Through The Years:
Fried Pies

One of Anthony's favorite foods has
always been homemade fried apricot pies.

When he left home at the age of sixteen to join the Kingsmen Quartet,
he knew that his days of apricot pies would be few and far between. Much to his surprise,
the very first time his parents traveled to hear him play, Anthony's mother brought him a large batch
of the pies. Having already gotten to know his fellow bus mates quite well, Anthony concealed and hid
his treasure until after the concert.

As fate would have it and by the time he got back on the bus, the entire batch of apricots pies had been consumed without a single pie left for him. It seems that Anthony's mother took no more chances of
that happening again, She would even hide the pies at her home from family members
until Anthony got there for his.

Here's the recipe for Anthony's favorite fried apricot pies:

I pkg. Sun Maid Apricots
2 cups water
2/3 cup sugar

3 cups flour
1 cup Crisco shortening
1/4 cup ice water
1/2 cup melted butter

Prepare filling by covering apricots with water and cooking down approx. 20 min. Mix in sugar.
Cover and refrigerate overnight.

For crust, make a very thin, pie-type crust. Cut shortening into flour, then use your hands to work ice water in
gradually. Knead until dough is right consistency. Roll dough out until thin.
Using a small to medium saucer, press out circles of dough.

Spoon 1 heaping TBSP of fruit filling into center of circle, fold over.
Press together and edge with fork. Using electric skillet for even heating,
fry in Crisco oil until light golden brown.
Remove and apply melted butter with brush.

Yields approx. 12
